Do: daydream the most fantastical adventure involving mermaids
Pale in colour with bright, juicy red fruits including strawberry and raspberry. Dry, easy, and refreshing.
Grenache from the ancient Cambrian soils of Heathcote was harvested and pressed directly to tank. The juice fermented slowly before full malolactic conversion. The wine was left to age for around 6 months on fine lees to build texture and complexity. The Grenache provides bright fruit, texture, and weight.
The Mourvèdre was harvested from vineyards around the Nagambie Lakes and handled similarly to the Grenache. This component of the wine adds complexity and finesse to the finished wine.
Finally, a small amount of barrel fermented Vermentino from Avenal in the Goulburn Valley was added to give more texture, acidity, and freshness to the blend.
The components were assembled in September of 2022 and a small addition of SO2 was made before gentle filtration and bottling in October.
“Mainly Grenache from Heathcote, with a small addition of Vermentino from Goulburn Valley. Bright salmon/pink. Red fruits and garrigue-like herbs such as lavender and thyme can be found in this flavourful, textured and relatively dry wine. Made to drink cold out of tumblers at your next BBQ”.
