The colour of the 2018 hints at a greater complexity. The nose is bright and carries classic ‘Strawberries and Cream’ with hints of fresh herbs. Full creamy palate with strawberries and cantaloupe and a savoury refreshing finish.

Flowering and fruit set for the 2018 season went really well and the crop was bountiful. Some wet weather during the growing and ripening season allowed for healthy vines and ensured a close eye was kept on canopies.

Fruit was hand-harvested on the 22 of February.  The grapes was pressed straight away and the juice cold settled in tank before being racked for fermentation. No yeast additions were made and the juice was allowed to kick off fermentation under it’s own steam. No additions were made and no temperature control was exercised. The wine was racked off gross lees and no inoculation was made for malolactic fermentation.

No fining, just a light filter and then racking with a small SO2 addition prior to bottling lead to a ‘fuller’ version of SOS Rosé.
