The wine shows aromas of black fruits including black cherry, black currant and blackberry as well as subtle rose petal and earth. The palate is savoury and firmly structured with primary fruit notes coming to the fore. The finish is long well supported by the chewy tannin structure.

The fruit was hand harvested and fully destemmed into open fermenters. Following this a small amount of juice was taken out as a Saignée. Chiller plates were left on for 48 hours and then given an initial pump over to homogenise the juice. No additions were made at any point.

The ferment is pumped over daily until it slowed and the cap softened. From which time a regime of watch and listen (or smell) was initiated. The cap was only plunged as required. After approximately three weeks maceration the wine was pressed and filled to neutral oak barrels for 6 months before bottling without fining or filtration. Once again a minimum sulphur addition takes place at bottling.
