Vermentino from Chalmers Vineyard

Golden goodness, little white flowers, pear, lime, cinnamon, brioche, candied pineapple

Eat. Pea, parmesan & basil risotto or grilled scallops topped with garlicy breadcrumbs

Deeply golden in appearance with plenty of sediment in the bottle. Nose of honeyed flowers and a beguiling array of layered fruit. Caramelised pear tart and lime and cinnamon. It shows more commonalty with a Northern Rhône white than its ancestral roots from the Mediterranean.

The Vermentino fruit for 2018 came to us in near perfect condition. Grown by the Chalmers Family at their Colbinabbin vineyard which is North on the famous Camel Range of the Heathcote GI. The vineyard sits on a westerly slope, in the Cambrian soil.  Here the approach to grape growing centres around organic practices.

Hand-picked, the grapes were whole bunch pressed immediately with no cuts (all available juice was taken). These pressings went into straight to a stainless-steel tank to be chilled for 48 hours. After one week, with fermentation beginning, it was transferred to barrel. The wild fermentation proved to be very healthy and vigorous as it went to dryness.

Malolactic fermentation occurred naturally and the wine was bottled in February with minimal racking and no filtration. A asmall amount, 40ppm of Sulphur Dioxide was added at bottling.
