P58 Chardonnay from Tuerong

The wine is dense and complex with aromas of curry leaves, cardamom, ripe stonefruits and an orchard of apples and pears. The palate continues with more stonefruit as well as earth and spice. It is a rich, textured and savoury wine with noticeable tannin and great length.
The Adina vineyard in Tuerong is planted on a very gentle north facing slope of red brown clay loam. Fruit from P58 Clone was harvested by hand in early March and sorted. The whole bunches were transferred, intact, to a 2 tonne stainless steel picking bin. A small addition of buckets of fermenting Yarra Valley Chardonnay were added to provide some CO2 cover and to assist the start of ferment. The bin was then sealed and left. After 21 days maceration, the grapes were pressed in a pneumatic press and sent to barrel to complete fermentation. No further ‘adds’ were made and the wine went through malolactic fermentation naturally. In January 2018, the wine was racked then bottled with a small addition of 40ppm Sulphur Dioxide.
