2022 SOS Yarra Valley Pinot Noir

Tasting notes:

Plums, blackberries and blueberries. Ruby red appearance. Aromas of spice and poached fruits. Finely structured with a soft underlying bed of plum, dark fruit characters and hints of vanilla. The finish is long, textured and savoury.

Leek and mushroom risotto, rabbit terrine

Fruit:

2022 was another low yielding year producing small, lightweight bunches. The cool and dry finish to the ripening season meant healthy fruit with excellent concentration and a lovely balance of sugar and acid.

Tech notes:

Fully destemmed into large stainless steel tanks. The must was cooled prior to the beginning of fermentation and then allowed to climb natural to 30C. Minimal handling throughout the fermentation gives us a more refined and balanced wine. After 14 days maceration on skins the resulting wine was pressed and moved to seasoned oak for a period of 6 months. A small addition of sulphur dioxide was made prior to bottling.

“Bill Downie, one half of Save Our Souls, knows a thing or two about pinot, and it shows in this nicely complex, savoury and slippery textured wine. Dark plum, maraschino cherry and orange peel aromas intermingle with spice and damp earth notes. Medium bodied, this has both good depth and energy, and there’s enough sinewy tannins to suggest this will continue to improve over the next three to four years”.
